Creamy Sausage Tortellini Soup Modern Honey

An easy 6-ingredient Sausage Tortellini Soup is a family favorite. This popular soup recipe can be made on the stovetop or in a slow cooker. Rich, creamy, flavorful soup that everyone raves about! 

I can’t believe that I have been sharing recipes for years on Modern Honey and I have yet to share one of my absolute favorite soups of all time. Thankfully, it is a perfect time since it is officially soup season!

When the weather takes a turn for the chilly and you’re in search of a comforting, hearty meal, there’s nothing quite like a bowl of homemade creamy sausage tortellini soup.

This popular soup recipe marries the rich flavors of Italian sausage, cheese-filled tortellini, and a creamy broth.

For several years in a row, I hosted a Christmas party in our home for the women in our church.  Many of the women brought their favorite soups to share. We devoured soup, ate homemade rolls, and decadent desserts. I always loved tasting every single soup (there would usually be 15 of them) and declaring my favorite.

One year my friend, Heidi, brought a soup that blew everyone’s socks off. She ended up sharing the recipe on our Facebook page because everyone and their dog was asking for it! We were all so grateful.

This Creamy Sausage Tortellini Soup is made with simple ingredients…

  • Italian Sausage — you can use mild or hot Italian sausage or your favorite turkey or chicken sausage.
  • Chicken Broth — if you desire a thinner soup, you may add additional chicken broth.
  • Crushed Tomatoes — If you only have diced tomatoes on hand, you can place them in the blender to puree.
  • Cream Cheese — this adds a rich, creaminess to the soup.
  • Cheese Tortellini — I suggest using refrigerated cheese tortellini in this recipe.
  • Spinach — I suggest using baby spinach leaves and tearing them or chopping into pieces.
  • Spices — for extra flavor, add a touch of garlic and red pepper flakes.

The beauty of this Slow Cooker Creamy Sausage Tortellini Soup is it can be made on the stovetop in less than 30 minutes or in the slow cooker. I have made it both ways and it couldn’t be easier.

Why use cream cheese in soups?

Do you know how to make a soup extra creamy without adding heavy cream? Enter cream cheese! Cream cheese is a game changer in soups. It creates a velvety, creamy sauce and is thicker than heavy cream so it holds up so well. A little tip is to make sure the cream cheese is completely melted before adding the tortellini.

This Sausage Tortellini Soup Recipe calls for baby spinach. You can leave it whole and it will wilt as it heats or you can chop it into small pieces so your kids won’t even notice it! This soup makes incredibly tasty leftovers if there are any left! It is easy to reheat and eat the next day.

How to make Sausage Tortellini Soup:

Now, let’s dive into the process of creating this creamy and comforting sausage tortellini soup:

  • Brown the Sausage:
    • Heat a large soup pot over medium heat and add the Italian sausage.
    • Break it apart with a wooden spoon as it cooks, browning it until it’s no longer pink.
    • Remove any excess grease by blotting it with a paper towel or draining it from the pot.
  • Add Broth and Tomatoes:
    • Stir in chicken broth, crushed tomatoes, and cream cheese. Cook until cream cheese is completely dissolved, stirring often. May use a whisk to incorporate the cream cheese. 
  • Simmer and Cook Tortellini:
    • Allow the soup to come to a boil and then reduce the heat to a simmer.
    • Add the tortellini to the simmering soup and cook according to the package instructions, usually about 7-10 minutes.
  • Stir in Spinach:
    • After the tortellini is cooked, reduce the heat to low and add the fresh spinach leaves and stir until they wilt and become tender, which takes just a few minutes.
  • Serve and Garnish:
    • Ladle the creamy sausage tortellini soup into bowls and garnish with grated Parmesan cheese.
    • Serve hot with a side of crusty bread or a salad.

    To make on Stove-Top:

    • In a large pot over medium-high heat, add sausage. Use a wooden spoon to break into bite-size pieces. You can add 1 Tablespoon of olive oil if it is sticking to the bottom of the pan. Cook for 7-8 minutes or until sausage is no longer pink. 

    • Stir in chicken broth, crushed tomatoes, and cream cheese. Cook until cream cheese is completely dissolved, stirring often. May use a whisk to incorporate the cream cheese. 

    • Stir in cheese tortellini and baby spinach and cook according to package instructions. If using refrigerated tortellini, it will be about 5 minutes. 

    • Optional: stir in garlic powder and salt, to taste. 

    • Garnish with parmesan cheese and fresh basil.

    To cook in Slow Cooker:

    • In a large pot over medium-high heat, add sausage. Use a wooden spoon to break into bite-size pieces. You can add 1 Tablespoon of olive oil if it is sticking to the bottom of the pan. Cook for 7-8 minutes or until sausage is no longer pink.

    • Add sausage, chicken broth, crushed tomatoes, and cream cheese to slow cooker and cook on low for 2 hours. 

    • Add tortellini and spinach and cook for 1 hour longer, for a total of 3 hours.  Optional: stir in garlic powder and salt, to taste. Garnish with parmesan cheese and fresh basil.
